چکیده

Rice milling plays a key factor in determining rice quality and value. Therefore accurate quality assessments are critical to the rice industry. This study was undertaken to assess the effect of exposing rice to elevated temperatures during milling, on cooked rice texture and rice flour pasting properties. Two long (Cybonnett and Francis) and one medium (Jupiter) rice (oryzae sativa L.) cultivars were milled using McGill laboratory mill for 30 and 40 s after warmed up the mill before milling. Four different milling temperatures per milling duration were achieved. Cooked rice texture properties were assessed using a uniaxial compression test and rice flour pasting properties measured using a TA-2000 rheometer. Results of this study showed that exposure of rice to high temperatures during milling significantly decreased cooked rice firmness. An increase in milled rice temperature after milling from 10.0 to 13.3 °C resulted in a 5.4 and 8.1 N decrease in cooked rice firmness. Although not always significant, the increase in milled rice temperature during milling resulted in an increase in cooked rice stickiness. The increase in milling temperature also showed significant increase in rice flour pasting properties. Changes in rice functional characteristics were attributed to the changes occurring to rice chemical constituents due to temperature exposure as indicated by the increase in rice protein hydrophobicity. Proteins are known to affect rice starch water holding capacity and other starch gelatinization properties.

Effect of Germination and Parboiling on Milling, Physicochemical, and Textural Properties of Medium- and Long-grain Rough Rice

Germinated brown rice is commonly consumed in Asia for its enhanced nutritional properties such as gamma-aminobutyric acid (GABA) and softer cooked texture. However germination decreases milling yield and alters some physicochemical properties, and most germinated rice studies evaluated medium-grain and aromatic rice cultivars. This study compared the effects of germination duration and parboil...

Effect of Moisture Content at Harvest and Degree of Milling (Based on Surface Lipid Content) on the Texture Properties of Cooked Long-Grain Rice

Cereal Chem. 84(2):119–124 The effects of the degree of milling (based on surface lipids content [SLC]) on cooked rice physicochemical properties were investigated. Head rice yield (HRY), protein, and SLC decreased with increasing milling, while the percent of bran removed and whiteness increased. Results showed that SLC significantly (P < 0.05) affected milled as well as cooked rice properties...

Prediction of Long-Grain Rice Texture and Pasting Properties From Starch and Protein Fractions

The objective of this study was to determine predictive models of rice functionality from protein and starch chemistry data. One long-grain rice variety (Cocodrie) was harvested from two fields in Arkansas. Rice was harvested from 8 locations in each field. Samples were then stored at 21oC/50% RH until equilibrated to a storage moisture content of 12%. Texture properties were measured using a T...

RICE QUALITY AND PROCESSING Effect of Long-Grain Rice Degree of Milling, Moisture Uptake, and Solids Leach During Cooking on Rice Textural Properties

Two long-grain rice cultivars/hybrids (‘Wells’ and ‘CL 161’) harvested from locations in Arkansas were used in this study. Rice samples were milled for 20, 30, 40, and 50 seconds. Milled whole-rice samples were cooked in excess water for 16, 18, 20, and 22 minutes and in a 2:1 water-to-rice ratio for 20 minutes (WR20). Cooked rice texture and solid leach were determined. Results indicated that ...

Properties of Flours and Starches as Affected by Rough Rice Drying Regime

Cereal Chem. 80(1):30–34 Flours and starches from rough rice dried using different treatment combinations of air temperature (T) and relative humidity (RH) were studied to better understand the effect of drying regime on rice functionality. Rough rice from cultivars Bengal and Cypress were dried to a moisture content of 12% by three drying regimes: low temperature (T 20°C, RH 50%), medium tempe...
