The equilibrium moisture content of red beetroot has been studied and the corresponding sorption- desorption curves have obtained at temperature 20°C. strain measurement method used to establish sorption curves. Analytical dependence describing also derived. Values contents for temperatures higher than 20°C by Pass Slepchenko’s method. results are presented in graphical table form.
