A brown-colored fraction containing heme was separated from the lipoprotein-free plasma of Japanese eel (Anguilla japonica). This fraction prevented the oxidation of very-low-density lipoprotein incubated with CuSO4 ranging in concentration from 0.5 to 3 μM.
