食品の安全性，健全性確保のために殺滅菌は不可欠な操作であるが，加工食品の製造においては近年，味・香りなど天然に近い品質重視，さらに栄養的な健康増進を求めるのがトレンドである。そのため，死滅に至らない「損傷菌（芽胞）」が発生しやすい状況であり，対策が求められている。このような社会的ニーズに応えるため，食品照射の基礎研究として，損傷菌（芽胞）の特性と，その対策のための放射線殺菌技術の有用性について紹介する。
