食品の安全性,健全性確保のために殺滅菌は不可欠な操作であるが,加工食品の製造においては近年,味・香りなど天然に近い品質重視,さらに栄養的な健康増進を求めるのがトレンドである。そのため,死滅に至らない「損傷菌(芽胞)」が発生しやすい状況であり,対策が求められている。このような社会的ニーズに応えるため,食品照射の基礎研究として,損傷菌(芽胞)の特性と,その対策のための放射線殺菌技術の有用性について紹介する。
