The prevalence of thermotolerant fungi on non-heat-sterilizable food was determined. Aspergillus spp. were noted in 100% of pepper and regular tea samples, 12 to 66% of fruits, 27% of herbal teas, and 20% of freeze-dried soup samples. All soft cheese samples were contaminated by Geotrichum and yeast (Candida norvegensis) but Candida albicans was never identified.

Consumers engage in food handling practices that can contribute to foodborne illness, and there is interest in improving those behaviors. The purpose of this study was to determine the impact of the “Food Safe Families” clean and separate messages on cross-contamination behaviors of consumers and to determine the impact of external safe food handling cues. Participants (n = 123) were randomly a...

Legacy lead (Pb) contamination from sport shooting activities is a well-known hazard. Assessing the risk this contamination presents to the environment and public health requires a detailed understanding of its spatial distribution, yet our knowledge in this area is limited, especially for wetland shooting ranges. In this study, we analyzed 1351 sediment samples from 456 surficial (0-5 cm) loca...

In case of contamination in the food chain, fast action is required in order to reduce the numbers of affected people. In such situations, being able to predict the fate of agents in foods would help risk assessors and decision makers in assessing the potential effects of a specific contamination event and thus enable them to deduce the appropriate mitigation measures. One efficient strategy su...

To achieve further reductions in foodborne illness levels in humans, effective pre-harvest interventions are needed. The health status of food animals that are destined to enter the human food supply chain may be an important, although often overlooked, factor in predicting the risk of human foodborne infections. The health status of food animals can potentially influence foodborne pathogen lev...
