در این پژوهش از   xanthomonas campestrisجهت تولید  صمغ زانتان با به کار گیری شیره خرما به عنوان سوبسترا استفاده شد. تخمیر با شیره خرما و شیره ساکاروز در دمای ˚c۲۸ و ٨/٦ph= در شیکر بن ماری (rpm ۲٤٠) انجام شد. اثر زمان تخمیر (٢٤، ٤٨، ٧٢، ٩٦ و ١٢٠ ساعت) بر تولید صمغ زانتان مورد مطالعه قرار گرفت. میزان تولید صمغ زانتان بعد از ۹۶ ساعت به حداکثر میزان  ml١٠٠/g ٨٩/٠ در دمای ˚c 28 و سرعت rpm ٢٤٠ رسید. ...
