DEVELOPMENT OF ACTIVE FILM FOR FOOD PACKAGING APPLICATIONS WITH CURCUMIN-LOADED ZEOLITIC IMIDAZOLATE FRAMEWORK-8

Aktif paketleme uygulamaları gıda raf ömrünü uzatarak israfını azaltmayı hedeflemektedir. Geliştirilen malzemelerinin biyobozunur, sürdürülebilir ve yenilenebilir kaynaklardan olması çevre kirliğinin azaltılması doğal kaynakların korunabilmesi için gereklidir. Bu nedenle, bu çalışmada antioksidan antimikrobiyal özelliklere sahip bir özüt olan kurkumin, zeolitik imidazol çerçeve-8 (K-ZİF-8) nanokristalleri içerisine kapsüllenmiştir. Tasarlanan aktif paketin destek malzemesi kitin nanokompozitler ise kültür mantarından elde edilmiştir. Kitin nanokompozit film farklı konsantrasyonlarda K-ZİF-8 eklenmiş konsantrasyon arttıkça filmlerin biyoaktif özelliklerinin arttığı gözlemlenmiştir. Diğer taraftan eklemenin mekanik, bariyer, optik, termal morfolojik özelliklerine istatistiksel olarak önemli etkisi olmamıştır. Antimikrobiyal test sonuçları E.coli bakteri kolonilerine karşı etkili olduğunu ortaya koyarken S.aureus aynı etki gözlemlenememiştir. En yüksek etki, toplam fenolik madde miktarı aktive 10XMÖK değerinde içeren filmde Ancak dayanıklılık testleri uzun süre depolamaya uygun olmadığını koymuştur.
