Effect of Optimized Chitosan Coating Obtained by Lactic Fermentation Chemical Treatment of Shrimp Waste on the Post-Harvest Behavior of Fresh-Cut Papaya (Carica papaya L.)

Chitosan is a biopolymer obtained from shrimp waste mainly by polluting chemical method. In this work, less biological-chemical method to obtain chitosan has been optimized; used successive lactic fermentation and process. Additionally, in the effect of coating on post-harvest behavior fresh-cut papaya was studied as practical application. A rotatable central composite design (CCRD) with two variables (fermentation time total soluble solids medium) optimize extraction. The optimized conditions for extraction were 108 h 8.74 °Brix. showed high deacetylation degree 83%, acceptable process yield 2.03%, low ash content 0.23% molecular weight 107.5 kDa. addition, decreased loss color acidity, well growth microorganisms; it also increased pH minimally processed slices without statistically significant difference that commercial chitosan. Based these results, could be applied other fruits maintain their quality characteristics inhibit microbial during storage fruits.
