Fabrication and application of bicontinuous interfacially jammed emulsions gels

چکیده

Bicontinuous interfacially jammed emulsion gels (bijels) comprise networks of interpenetrating domains two immiscible liquids stabilized by nanoparticles at the fluid–fluid interface. Bijels were first reported in simulation, which subsequently spurred experimentalists to develop fabrication approaches including thermal quenching, cosolvent removal, and direct mixing explore bijels applications that exploit their unique properties morphology. Here, we comprehensively review recent developments bijel compare various techniques. We also share our perspective on potential future directions applications.

The bijel: a bicontinuous interfacially jammed emulsion gel

The bijel is a new class of soft material comprised of two fluids arrested in a bicontinuous configuration on the mesoscale. We stabilize the fluid structure using an interfacial layer of silica particles. The particles become trapped at the liquid-liquid interface because they reduce the exposed area; this relies on the particles being partially wetted by both liquids. We use water and 2,6-lut...

Fluid-bicontinuous emulsions stabilized by colloidal particles

Using controlled spinodal decomposition, we have created a fluid-bicontinuous structure stabilized by colloidal particles. We present confocal microscopy studies of these structures and their variation with kinetic pathway. Our studies reveal a rigid multilayer of colloidal particles jammed at the interface which prevents the liquids demixing for many hours. The arrangement of two-fluid domains...

Bicontinuous emulsions stabilized solely by colloidal particles.

Recent large-scale computer simulations suggest that it may be possible to create a new class of soft solids, called 'bijels', by stabilizing and arresting the bicontinuous interface in a binary liquid demixing via spinodal decomposition using particles that are neutrally wetted by both liquids. The interfacial layer of particles is expected to be semi-permeable; hence, if realized, these new m...

Particle-size effects in the formation of bicontinuous Pickering emulsions.

We demonstrate that the formation of bicontinuous emulsions stabilized by interfacial particles (bijels) is more robust when nanoparticles rather than microparticles are used. Emulsification via spinodal demixing in the presence of nearly neutrally wetting particles is induced by rapid heating. Using confocal microscopy, we show that nanospheres allow successful bijel formation at heating rates...

Probe diffusion in phase-separated bicontinuous biopolymer gels.

Probe diffusion was determined in phase separated bicontinuous gels prepared by acid-induced gelation of the whey protein isolate-gellan gum system. The topological characterization of the phase-separated gel systems is achieved by confocal microscopy and the diffusion measurements are performed using pulsed field gradient (PFG) NMR and fluorescence recovery after photo-bleaching (FRAP). These ...
