Multi-indicator design and assessment of sustainable diet plans

In this work, a set of diet plans that are nutritionally adequate and healthy, affordable, environmentally friendly is analyzed. They refer to two-week full-board menus for nursing homes designed using multi-objective optimization model in which different conflicting goals, such as the carbon water footprints, cost, nutritional acceptability requirements, pursued. As consequence, design provides several corresponding trade-offs between goals. Energy nutrient contents constrained suitable ranges suggested by dietary recommendation health authorities. The footprints cost considered goals be minimized. More than one hundred have been explore all possible three analysis shows cheaper more impacting it make trade-off while keeping menu unchanged.
