Nutritional analysis and sensory evaluation of food products enriched with Moringa oleifera leaves

The present study was primarily undertaken on Moringa oleifera Leaves which are commonly referred to as drumstick. These important food commodity has enormous attention the natural nutrition of tropics. leaves, seeds and flower olefera all have great nutritional therapeutic value. Moreover consumption is very less due lack knowledge awareness. Therefore, effort made develop products. Two consumed products namely Laddu Mathri were developed incorporated at 5gm, 10gm 15gm levels leaves powder. All samples powder enriched Food evaluated for its sensory attributes by using 9-point hedonic scale analysis product carried out ICMR table Indian food. incorporating with 5gm found most acceptable panel members result Nutritive value indicated that had appreciable amount Protein, Energy calcium. it can be concluded from enrichment improved content.
