The size distribution of fat globules in homogenized concentrated dairy cream has been measured High-Pressure Homogenizers (HPH), working at 80 °C and various operating pressures. For each pressure, the outlet is found to be self-similar inlet distribution, can accurately predicted dividing class diameter by a single proportionality factor, which interpreted using simplified deformation model as elongated filaments. evolution factor with pressure consistent scaling analysis average shear rate HPH well value from numerical simulations flow HPH, supporting physical interpretation fragmentation model.
