Structural Determination of Pectins by Spectroscopy Methods

Plant polysaccharides include pectins, which are responsible for an important role in plant physiology and part of the cell wall. These compounds known as gelling stabilizing agents, widely used food industry. The scientific literature lacks precise information on spectroscopy apple pectin citrus pectin. Therefore, aim this work was to test compare physicochemical properties these compounds. curves FT-IR, NMR, ESI-MS, thermogravimetric analysis (TGA) samples were measured discussed. spectroscopic results confirms that isolated pectins using various enzymes (xylanase cellulase) have a structure similar commercially available (PectaSol-C), with noticeable change morphology. characteristics helpful further basic research application.
