Sensory Neuroscience: Taste Responses in Primary Olfactory Cortex
نویسندگان
چکیده
A new electrophysiological study in rodents demonstrates that taste-odor convergence occurs in posterior piriform olfactory cortex and calls for a reformulation of classic models of the central representation of flavor.

Gustatory, olfactory, and visual convergence within the primate orbitofrontal cortex.
Behavioral and perceptual responses to food depend on a convergence between gustatory, olfactory, and visual information. In previous studies a secondary cortical taste area has been found in the caudolateral orbitofrontal cortex of the primate. Furthermore, neurons with olfactory responses have been recorded in a more medial part of the orbitofrontal cortex, and visual inputs have been shown t...
متن کاملChemosensory convergence on primary olfactory cortex.
Food perception and preference formation relies on the ability to combine information from both the taste and olfactory systems. Accordingly, psychophysical investigations in humans and behavioral work in animals has shown that the taste system plays an integral role in odor processing. However, the neural basis for the influence of taste (gustation) on odor (olfaction) remains essentially unkn...
متن کاملResponses to the sensory properties of fat of neurons in the primate orbitofrontal cortex.
The primate orbitofrontal cortex is a site of convergence of information from primary taste, olfactory, and somatosensory cortical areas. We describe the responses of a population of single neurons in the orbitofrontal cortex that responds to fat in the mouth. The neurons respond, when fatty foods are being eaten, to pure fat such as glyceryl trioleate and also to substances with a similar text...

متن کاملUmami: a delicious flavor formed by convergence of taste and olfactory pathways in the human brain.
Umami taste is produced by glutamate acting on a fifth taste system. However, glutamate presented alone as a taste stimulus is not highly pleasant, and does not act synergistically with other tastes (sweet, salt, bitter and sour). We show here that when glutamate is given in combination with a consonant, savory, odour (vegetable), the resulting flavor can be much more pleasant. Moreover, we sho...
