هدف از این مطالعه بررسی اثر ضدباکتریایی عصاره آبی زعفران بر رشد باکتری سالمونلا تیفی موریوم در سوپ جو تجاری بود. حداقل غلظت مهاری و نیز حداقل غلظت کشندگی عصاره آبی زعفران به روش براث میکرودایلوشن ارزیابی گردید. این شاخص ها به ترتیب 100 میلی گرم در میلی لیتر و 200 میلی گرم در میلی لیتر حاصل شدند. نتایج نشان می دهند که با افزایش غلظت عصاره آبی زعفران و با کاهش دمای نگه داری سوپ جو تجاری، اثر ضدبا...
